It was traditionally <strong>eaten during festive occasions such as the local festival or Christmas<\/strong>. As hen was not easily accessible, this dish was reserved for special days.<\/p><br \/>\n<p data-start=\"1062\" data-end=\"1266\">This recipe is part of the <a href=\"\/en\/llibre-blanc-del-turisme-gastronomic\/\"><strong>White Paper of Gastronomic Tourism in Tortosa<\/strong><\/a> and was provided by <strong>Margaret Nofre<\/strong>. Boil gently for about 1.5 hours, skimming off the brownish foam that forms on top.<\/div><\/div><\/div><div class=\"vc-incubalia-text-image\"><div class=\"vc-incubalia-text-image__container\"><div class=\"vc-incubalia-text-image__image mobile desktop\"><img decoding=\"async\" src=\"https:\/\/www.tortosaturisme.cat\/wp-content\/uploads\/2025\/06\/2-5.jpg\" alt=\"\"><\/div><div class=\"vc-incubalia-text-image__text\"><h4 class=\"vc-incubalia-text-image__subtitle\">2<\/h4>Next, add the cleaned vegetables, saffron, and the whole giblets (liver, gizzards, and heart), also cleaned. Let it simmer for 30 to 45 minutes on low heat.<\/div><\/div><\/div><div class=\"vc-incubalia-text-image\"><div class=\"vc-incubalia-text-image__container\"><div class=\"vc-incubalia-text-image__image mobile desktop\"><img decoding=\"async\" src=\"https:\/\/www.tortosaturisme.cat\/wp-content\/uploads\/2025\/06\/3-5.jpg\" alt=\"\"><\/div><div class=\"vc-incubalia-text-image__text\"><h4 class=\"vc-incubalia-text-image__subtitle\">3<\/h4>Once the broth is ready, reserve half a liter and pour it into a smaller pot to cook the <i>galets<\/i> pasta.<\/div><\/div><\/div><div class=\"vc-incubalia-text-image\"><div class=\"vc-incubalia-text-image__container\"><div class=\"vc-incubalia-text-image__image mobile desktop\"><img decoding=\"async\" src=\"https:\/\/www.tortosaturisme.cat\/wp-content\/uploads\/2025\/06\/4-4.jpg\" alt=\"\"><\/div><div class=\"vc-incubalia-text-image__text\"><h4 class=\"vc-incubalia-text-image__subtitle\">4<\/h4>Chop the liver, gizzards, and heart finely; shred the hen meat.<\/div><\/div><\/div><div class=\"vc-incubalia-text-image\"><div class=\"vc-incubalia-text-image__container\"><div class=\"vc-incubalia-text-image__image mobile desktop\"><img decoding=\"async\" src=\"https:\/\/www.tortosaturisme.cat\/wp-content\/uploads\/2025\/06\/5-4.jpg\" alt=\"\"><\/div><div class=\"vc-incubalia-text-image__text\"><h4 class=\"vc-incubalia-text-image__subtitle\">5<\/h4>Cook the <i>galets<\/i> in the reserved broth; after about 7 minutes, add the chopped giblets and shredded hen.
