L\u2019horta i els productes de la mar i el delta identifiquen els plats elaborats pel xef del Citrus; pimentons, alberginieres i col junt amb la sardina de casco i l\u2019anguila en les diferents versions com el xapadillo en s\u00f3n la base de la reinterpretaci\u00f3 dels plats. Durant la cocci\u00f3 es tapa perqu\u00e8 deixi anar la seva pr\u00f2pia humitat i no es cremi, evitant aix\u00ed que agafi un gust amarg. Es treballa a foc suau fins que queda molt rostida, gaireb\u00e9 caramel\u00b7litzada, moment en qu\u00e8 la col desenvolupa tot el seu potencial de sabor i canvia completament la seva textura.<\/div><\/div><\/div><div class=\"vc-incubalia-text-image\"><div class=\"vc-incubalia-text-image__container\"><div class=\"vc-incubalia-text-image__image mobile desktop\"><img decoding=\"async\" src=\"https:\/\/www.tortosaturisme.cat\/wp-content\/uploads\/2026\/05\/plantilla-Fotos-900x6005-1.jpg\" alt=\"\"><\/div><div class=\"vc-incubalia-text-image__text\">Aquesta base es cobreix amb un pil-pil elaborat principalment amb sardina, al qual s\u2019hi afegeix tamb\u00e9 una petita quantitat de suquet de peix per donar-li m\u00e9s cos. El pil-pil s\u2019elabora infusionant caps i espines de sardina de casco amb el suquet de peix i aix\u00ed refor\u00e7ar el sabor i donar protagonisme a aquest producte tan tradicional, caracteritzat pel seu gust intens i sal\u00ed.<\/div><\/div><\/div><div class=\"vc-incubalia-text-image\"><div class=\"vc-incubalia-text-image__container\"><div class=\"vc-incubalia-text-image__image mobile desktop\"><img decoding=\"async\" src=\"https:\/\/www.tortosaturisme.cat\/wp-content\/uploads\/2026\/05\/plantilla-Fotos-900x6006-1.jpg\" alt=\"\"><\/div><div class=\"vc-incubalia-text-image__text\">La sardina de casco es prepara netejant-la b\u00e9, retirant escates i espines, i deixant-la llesta per servir. A m\u00e9s, s\u2019incorpora tamb\u00e9 sardina fumada per aportar un contrast de sabor i donar un toc m\u00e9s actual al plat, mantenint alhora l\u2019ess\u00e8ncia de la recepta cl\u00e0ssica. El fumat, fet lleugerament amb fusta, aporta aroma i profunditat.<\/div><\/div><\/div><div class=\"vc-incubalia-text-image\"><div class=\"vc-incubalia-text-image__container\"><div class=\"vc-incubalia-text-image__image mobile desktop\"><img decoding=\"async\" src=\"https:\/\/www.tortosaturisme.cat\/wp-content\/uploads\/2026\/05\/plantilla-Fotos-900x6007-1.jpg\" alt=\"\"><\/div><div class=\"vc-incubalia-text-image__text\">El plat es munta col\u00b7locant el trinxat a la base, napant-lo amb el pil-pil infusionat de sardina i afegint a la part superior petits trossos de sardina de casco i de sardina fumada.
