Receptes que porten, m\u00e9s enll\u00e0 d\u2019una menja, a un fet gastron\u00f2mic de mem\u00f2ria col\u00b7lectiva, dol\u00e7os de festa major i de temps de festes nadalenques. A la vegada junt amb el repte de no perdre aquesta mem\u00f2ria col\u00b7lectiva s\u2019afegeix la complexitat de actualitzar receptes amb una senzillesa pel que fa al proc\u00e9s propi d\u2019elaboraci\u00f3. El primer \u00e9s un tomac\u00f3 concentrat, treballat fins a obtenir una preparaci\u00f3 molt intensa. El segon \u00e9s un tom\u00e0quet tipus Montserrat, simplement saltat, per mantenir-ne la frescor. Finalment, s\u2019utilitza tom\u00e0quet pera tallat en p\u00e8tals, cuinat amb una mica de mantega i sucre seguint el procediment cl\u00e0ssic d\u2019una tatin, amb base de pasta de full.<\/div><\/div><\/div><div class=\"vc-incubalia-text-image\"><div class=\"vc-incubalia-text-image__container\"><div class=\"vc-incubalia-text-image__image mobile desktop\"><img decoding=\"async\" src=\"https:\/\/www.tortosaturisme.cat\/wp-content\/uploads\/2026\/04\/1-31.jpg\" alt=\"\"><\/div><div class=\"vc-incubalia-text-image__text\">El past\u00eds tatin es passa breument pel forn per donar-li color i acabar de caramel\u00b7litzar la superf\u00edcie.Com a acompanyament, es prepara una crema de fesols. Les mongetes es couen fins que queden ben tendres, sense importar que es trenquin, ja que es trituren amb una mica d\u2019oli d\u2019oliva, sal i un toc de menta. El resultat \u00e9s una crema fina que recorda la textura d\u2019un hummus, tot i que en aquest cas s\u2019elabora amb fesols.<\/div><\/div><\/div><div class=\"vc-incubalia-text-image\"><div class=\"vc-incubalia-text-image__container\"><div class=\"vc-incubalia-text-image__image mobile desktop\"><img decoding=\"async\" src=\"https:\/\/www.tortosaturisme.cat\/wp-content\/uploads\/2026\/04\/2-35.jpg\" alt=\"\"><\/div><div class=\"vc-incubalia-text-image__text\">La proposta es construeix treballant cada ingredient per separat, donant-li protagonisme propi. La ceba es prepara en forma d\u2019envinagrat, el fesol es transforma en crema, el tom\u00e0quet es presenta en forma de tatin i el pebrot s\u2019integra dins d\u2019una salsa inspirada en el romesco o en la salsa de cal\u00e7ots, aportant el gust caracter\u00edstic del pebrot escalivat. El bacall\u00e0 es prepara amb una cocci\u00f3 molt suau, buscant un punt intermedi entre cru i cuinat.<\/div><\/div><\/div><div class=\"vc-incubalia-text-image\"><div class=\"vc-incubalia-text-image__container\"><div class=\"vc-incubalia-text-image__image mobile desktop\"><img decoding=\"async\" src=\"https:\/\/www.tortosaturisme.cat\/wp-content\/uploads\/2026\/04\/4-6.jpg\" alt=\"\"><\/div><div class=\"vc-incubalia-text-image__text\">Per al muntatge, es col\u00b7loca primer la crema de fesol com a base. A sobre s\u2019hi afegeixen alguns fesols senceres per aportar textura, i despr\u00e9s el bacall\u00e0, que actua com a element principal. A continuaci\u00f3 s\u2019hi incorpora la ceba envinagrada.<\/div><\/div><\/div><div class=\"vc-incubalia-text-image\"><div class=\"vc-incubalia-text-image__container\"><div class=\"vc-incubalia-text-image__image mobile desktop\"><img decoding=\"async\" src=\"https:\/\/www.tortosaturisme.cat\/wp-content\/uploads\/2026\/04\/5-5.jpg\" alt=\"\"><\/div><div class=\"vc-incubalia-text-image__text\">Tot seguit s\u2019hi afegeix la salsa de pebrot i s\u2019hi afegeixen diferents germinats, com ara de r\u00facula, de bleda i de rave.
