Era un plato que <strong>habitualmente se consum\u00eda en momentos festivos<\/strong> como la <strong>fiesta mayor o la Navidad<\/strong>. El acceso a la gallina no era habitual, por lo que este plato se cocinaba en d\u00edas especiales.<\/p><br \/>\n<p data-start=\"471\" data-end=\"691\">Esta receta forma parte del <a href=\"\/es\/llibre-blanc-del-turisme-gastronomic\/\"><strong>Libro Blanco del turismo gastron\u00f3mico en Tortosa<\/strong><\/a> y ha sido facilitada por <strong>Margaret Nofre<\/strong>. Durante una hora y media, iremos quitando la espuma que se genera al hervir las carnes y huesos, de color marronoso.<\/div><\/div><\/div><div class=\"vc-incubalia-text-image\"><div class=\"vc-incubalia-text-image__container\"><div class=\"vc-incubalia-text-image__image mobile desktop\"><img decoding=\"async\" src=\"https:\/\/www.tortosaturisme.cat\/wp-content\/uploads\/2025\/06\/2-5.jpg\" alt=\"\"><\/div><div class=\"vc-incubalia-text-image__text\"><h4 class=\"vc-incubalia-text-image__subtitle\">2<\/h4>A continuaci\u00f3n, a\u00f1adimos las hortalizas, previamente limpias, el azafr\u00e1n y el h\u00edgado, las mollejas y el coraz\u00f3n, todo entero y tambi\u00e9n lavado previamente.
