L\u2019abadejo en suc que tan ens porta al Mercat com al context festiu de la setmana santa. Per altra banda l\u2019arr\u00f2s col i fesols un plat d\u2019olla que representa tant a Tortosa com a bona part del territori del delta. Per a la seva preparaci\u00f3 s\u2019utilitzen ingredients senzills per\u00f2 molt representatius: bacall\u00e0, farina d\u2019arr\u00f2s, tom\u00e0quet, ceba, carxofes confitades, llorer i un ou cuinat a baixa temperatura. Tot plegat es treballa amb oli d\u2019oliva de la mateixa comarca, refor\u00e7ant aix\u00ed el car\u00e0cter local del plat.<\/div><\/div><\/div><div class=\"vc-incubalia-text-image\"><div class=\"vc-incubalia-text-image__container\"><div class=\"vc-incubalia-text-image__image mobile desktop\"><img decoding=\"async\" src=\"https:\/\/www.tortosaturisme.cat\/wp-content\/uploads\/2026\/04\/Algadir-abadejo-en-suc-2.jpg\" alt=\"\"><\/div><div class=\"vc-incubalia-text-image__text\">El proc\u00e9s comen\u00e7a escalfant l\u2019oli, on es marcar\u00e0 el bacall\u00e0 pr\u00e8viament enfarinat amb farina d\u2019arr\u00f2s. Aquesta farina aporta una textura m\u00e9s lleugera i cruixent que la farina convencional, millorant el resultat final del peix.<\/div><\/div><\/div><div class=\"vc-incubalia-text-image\"><div class=\"vc-incubalia-text-image__container\"><div class=\"vc-incubalia-text-image__image mobile desktop\"><img decoding=\"async\" src=\"https:\/\/www.tortosaturisme.cat\/wp-content\/uploads\/2026\/04\/Algadir-abadejo-en-suc-3.jpg\" alt=\"\"><\/div><div class=\"vc-incubalia-text-image__text\">En el mateix oli s\u2019hi afegeixen els alls picats, que serveixen de base arom\u00e0tica per comen\u00e7ar a construir la salsa. A continuaci\u00f3 s\u2019hi incorpora la ceba i es deixa sofregir lentament fins que es torna melosa. Seguidament s\u2019hi afegeix el tom\u00e0quet, que aporta acidesa i equilibri al conjunt.<\/div><\/div><\/div><div class=\"vc-incubalia-text-image\"><div class=\"vc-incubalia-text-image__container\"><div class=\"vc-incubalia-text-image__image mobile desktop\"><img decoding=\"async\" src=\"https:\/\/www.tortosaturisme.cat\/wp-content\/uploads\/2026\/04\/Algadir-abadejo-en-suc-5.jpg\" alt=\"\"><\/div><div class=\"vc-incubalia-text-image__text\">Per enriquir la preparaci\u00f3, s\u2019hi incorpora un brou suau elaborat amb les espines i les pells del mateix bacall\u00e0, aprofitant al m\u00e0xim el producte i potenciant-ne el sabor. Quan aquest sofregit est\u00e0 ben concentrat, es tritura fins a obtenir una salsa fina i homog\u00e8nia.<\/div><\/div><\/div><div class=\"vc-incubalia-text-image\"><div class=\"vc-incubalia-text-image__container\"><div class=\"vc-incubalia-text-image__image mobile desktop\"><img decoding=\"async\" src=\"https:\/\/www.tortosaturisme.cat\/wp-content\/uploads\/2026\/04\/Algadir-abadejo-en-suc-6.jpg\" alt=\"\"><\/div><div class=\"vc-incubalia-text-image__text\">Un cop la base est\u00e0 llesta, s\u2019hi torna a incorporar el bacall\u00e0, que es cuina durant pocs minuts, aproximadament quatre, per mantenir-ne la sucul\u00e8ncia i evitar una cocci\u00f3 excessiva.<\/div><\/div><\/div><div class=\"vc-incubalia-text-image\"><div class=\"vc-incubalia-text-image__container\"><div class=\"vc-incubalia-text-image__image mobile desktop\"><img decoding=\"async\" src=\"https:\/\/www.tortosaturisme.cat\/wp-content\/uploads\/2026\/04\/Algadir-abadejo-en-suc-7.jpg\" alt=\"\"><\/div><div class=\"vc-incubalia-text-image__text\">A continuaci\u00f3 s\u2019hi afegeixen les carxofes, que han estat pr\u00e8viament confitades a baixa temperatura, al voltant de 65 \u00b0C, en oli d\u2019oliva. Aquest proc\u00e9s permet conservar-ne la textura tendra i potenciar-ne el sabor.<\/div><\/div><\/div><div class=\"vc-incubalia-text-image\"><div class=\"vc-incubalia-text-image__container\"><div class=\"vc-incubalia-text-image__image mobile desktop\"><img decoding=\"async\" src=\"https:\/\/www.tortosaturisme.cat\/wp-content\/uploads\/2026\/04\/Algadir-abadejo-en-suc-1.jpg\" alt=\"\"><\/div><div class=\"vc-incubalia-text-image__text\">Quan la cocci\u00f3 finalitza, el conjunt es retira del foc i es deixa reposar lleugerament perqu\u00e8 la temperatura baixi. Aquest pas \u00e9s important per aconseguir que l\u2019oli del bacall\u00e0 emulsioni amb la salsa, lligant tots els elements i aportant una textura m\u00e9s untuosa i equilibrada.
