L\u2019horta i els productes de la mar i el delta identifiquen els plats elaborats pel xef del Citrus; pimentons, alberginieres i col junt amb la sardina de casco i l\u2019anguila en les diferents versions com el xapadillo en s\u00f3n la base de la reinterpretaci\u00f3 dels plats. Dins d\u2019una olla s\u2019hi posa una gran quantitat d\u2019anguila amb verdura molt rostida, cl\u00e0ssica del suquet, com ara tomata rostida, una mica d\u2019all i ceba, tot ben rostit, i es deixa coure conjuntament. D\u2019aquest proc\u00e9s se n\u2019obt\u00e9 un colagen que es munta amb una picada tradicional catalana, que constitueix la base del plat.<\/p><br \/>\n<p><\/div><\/div><\/div><div class=\"vc-incubalia-text-image\"><div class=\"vc-incubalia-text-image__container\"><div class=\"vc-incubalia-text-image__image mobile desktop\"><img decoding=\"async\" src=\"https:\/\/www.tortosaturisme.cat\/wp-content\/uploads\/2026\/05\/plantilla-Fotos-900x6009-1.jpg\" alt=\"\"><\/div><div class=\"vc-incubalia-text-image__text\"><\/p><br \/>\n<p>A partir d\u2019aquesta base, el plat s\u2019acompanya amb diferents elaboracions. Es comen\u00e7a amb l\u2019anguila treballada en forma de xapadillo, un producte molt propi del territori, elaborat amb anguila de les Terres de l\u2019Ebre. Aquest producte es cuina directament damunt del carb\u00f3, fet que li dona una textura molt cruixent.
