Menjar Blanc (Catalan Milk Dessert)


Menjar blanc (Catalan milk dessert) is a dessert shared with other Catalan cities such as Reus. However, what makes it unique in Tortosa is that it is made with rice flour. It is a dish associated with the Candelaria celebration on February 2nd in Tortosa.


This recipe is part of the White Paper of Gastronomic Tourism in Tortosa and was provided by Marc Duran from the restaurant La Torreta de Remolins.


INGREDIENTS

500 ml milk


40 g rice flour


75 g sugar


Cinnamon stick and ground cinnamon


1 lemon

PREPARATION

STEP BY STEP

First, infuse 400 ml of the milk with the cinnamon stick and lemon peel. To do this, heat the milk gently with the cinnamon and lemon peel over low heat for about 20 minutes.

Meanwhile, mix the rice flour with the sugar and whisk it together with the remaining cold (non-infused) milk. Stir well to avoid lumps.

Remove the cinnamon stick and lemon peel from the infused milk, and slowly add the flour and sugar mixture, stirring constantly.

Continue stirring over low heat until the mixture begins to thicken. Once it reaches the desired consistency, pour it into serving bowls or cups and let it cool.

Finally, sprinkle ground cinnamon on top and serve.
