In Tortosa, every recipe tells a story. Gastronomy is part of our intangible heritage: a legacy passed down from mothers to daughters, from grandparents to grandchildren, through flavours that speak of the river, the market garden, the forest and the sea.
This is our cuisine of memory. A humble, seasonal and resourceful cooking tradition, yet also rich, creative and deeply rooted in the land. Dishes such as menjar blanc, borratxets omelette or rabbit in sauce do more than fill plates — they nourish the soul.
This collection of recipes, accompanied by videos recorded at the Escola d’Hoteleria of Institut Dertosa and guided by chef Margaret Nofre, forms part of the project “Tortosa, the past is an adventure”, co-financed by the Next Generation EU funds through the 2022 Tourism Sustainability Plan in Destinations.
